1) vegetable upma and poha

Vegetable poha and upma are among the most commonly prepared breakfasts in Indian households, and without a doubt, they are one of the best choices to start your day with. These breakfasts are lightweight, comforting, and easy to digest, making them ideal for mornings. They provide the right amount of energy that helps you begin your day feeling fresh, active, and balanced. However, vegetable poha and upma comes in the category of healthy breakfasts only when you add plenty of vegetables to them without vegetable i can’t be called healthy. You can include vegetables like carrot, tomato, capsicum, onion, and other seasonal veggies whatever of your preference. Adding more vegetables not only makes your poha or upma more tasty, but also more nutritious and richer in protein, fiber, and essential vitamins.
Process of making :
Vegetable Poha Recipe
Ingredients:
• 1 cup poha (flattened rice)
• 1 small onion (chopped)
• 1 small carrot (grated)
• ½ capsicum (chopped)
• 1 small tomato (chopped)
• 2 tbsp peanuts
• 1 green chilli (optional)
• ½ tsp mustard seeds
• ½ tsp turmeric
• Salt to taste
• 1 tsp oil
• Lemon juice
• Fresh coriander
Method:
1. Wash poha gently and keep it aside to soften.
2. Heat oil in a pan, add mustard seeds and peanuts.
3. Add onion and sauté until light golden.
4. Add vegetables, green chilli, turmeric, and salt. Cook for 2–3 minutes.
5. Add softened poha and mix gently.
6. Cook on low flame for 2 minutes.
7. Switch off the flame, add lemon juice and coriander.
Vegetable Upma Recipe
Ingredients:
• 1 cup rava (semolina)
• 1 small onion (chopped)
• 1 small carrot (chopped)
• ½ capsicum (chopped)
• ½ cup green peas
• 1 green chilli (optional)
• ½ tsp mustard seeds
• 6–8 curry leaves
• Salt to taste
• 1 tbsp oil
• 2½ cups water
Method:
1. Dry roast rava until light golden and keep aside.
2. Heat oil in a pan, add mustard seeds and curry leaves.
3. Add onion and sauté until soft.
4. Add vegetables, salt, and green chilli. Cook for 2–3 minutes.
5. Add water and let it boil.
6. Slowly add rava while stirring continuously.
7. Cook on low flame until soft.
2) Moong dal chila

Moong dal is one of the healthiest and easiest-to-digest dals .It is a great source of plant-based protein, which helps to ,Build and repair muscles, Keep you full for longer, Prevent sudden hunger cravings,
Compared to other dals . It is very gentle on the digestive system. It contains good dietary fiber which is very good for your gut health.

Moong Dal Chilla Recipe
Ingredients:
• 1 cup yellow moong dal
• 1 small onion (finely chopped)
• 1 small carrot (grated)
• 1–2 tbsp chopped coriander
• 1 green chilli (optional)
• ½ tsp cumin seeds
• ¼ tsp turmeric
• Salt to taste
• Water (as required)
• 1 tsp oil (for cooking)
Method:
1. Wash and soak moong dal for 4–5 hours or overnight.
2. Drain the water and grind the dal into a smooth batter using little water.
3. Transfer the batter to a bowl. Add onion, carrot, coriander, green chilli, cumin seeds, turmeric, and salt. Mix well.
4. Heat a non-stick pan and lightly grease it with oil.
5. Pour a ladle of batter and spread it gently into a thin circle.
6. Cook on medium flame until bubbles appear, then flip and cook the other side.
7. Cook until both sides turn light golden.
